Popular tasting menu restaurant Six by Nico is transporting Cardiff diners straight to the American South this summer with the launch of its latest concept: New Orleans. The immersive six-course experience, running from 2nd June to 13th July 2025, draws inspiration from the vibrant culture, cuisine, and people of Louisiana’s most iconic city.
Located in the heart of the city, Six by Nico is known for reinventing its menu every six weeks, taking diners on culinary journeys across the globe. For this latest instalment, the team travelled to New Orleans itself, exploring local dishes, flavours, and traditions to craft an authentic and imaginative menu.
“There was always a seat at the table for us,” said founder and CEO Nico Simeone, reflecting on the research trip. “We queued for muffuletta at Central Grocery, wiped sugar from our faces after too many beignets, and cooked with the incredible Gason Nelson, who reminded us that a great meal is never just about the ingredients.”
The new menu pays tribute to New Orleans’ diverse food heritage, shaped by Native American, West African, Haitian, French, Spanish, German, and Italian influences. With a rich mix of Creole and Cajun flavours, the dishes celebrate one of America’s most distinctive culinary traditions.
What’s on the Menu?
The six-course tasting experience includes:
- Barbeque Shrimp & Grits – Sweet and sour BBQ shrimp with creamed corn grits and brown butter foam.
- Boudin Ball – Smoked tasso boudin with andouille sausage, burnt apple and mostarda.
- Central Grocery Muffuletta – A creative twist on the famous sandwich with cochon, taleggio, olive tapenade, and heirloom tomato.
- Gumbo – Cajun-spiced black pollock with popcorn rice cake, summer squash, brown crab sauce, and sour lemon.
- Louisiana Fried Chicken – Smoked chicken with buttermilk thigh, grilled corn, black garlic and collard greens.
- Bananas Foster – Baked banana delice with rum dulce de leche, cocoa nib, crème fraîche sorbet and a vanilla beignet.
Vegetarian, vegan, and gluten-free versions are available, making the experience accessible to all.
