Six by Nico’s New Seoul Menu in Cardiff

We’ve had a first look at Six by Nico’s latest destination menu, and this one is all about bold flavours and proper heat.

Running from 20th April to 31st May 2026, the new six-course tasting menu is inspired by the street food, markets and kitchens of Seoul, taking you on a journey through some of the city’s most iconic dishes and food spots. 

Each course is built around a different stop on that journey, starting with the foundations of Korean cooking and moving through busy market dishes and late-night favourites, before finishing with a sweet café-style dessert.

You can expect dishes inspired by:

  • Kimchi and Korean fermentation traditions, setting the tone for the menu
  • Bakery-style bites, reflecting Seoul’s café culture
  • Handmade noodle dishes from bustling markets like Gwangjang
  • bibimbap-inspired course, celebrating simple, balanced flavours
  • Korean street snacks, including crispy, savoury pancakes
  • A more refined chef-led dish, showcasing modern Korean cooking
  • Korean fried chicken, bringing that signature crunch and spice
  • And to finish, a matcha doughnut-style dessert inspired by Seoul’s café scene 

From what we tried, highlights include the gochujang Korean fried chicken, a bibimbap-style dish with a rich confit egg yolk, and that standout matcha doughnut dessert that rounds things off perfectly.

As always, there’s the option to add a wine or cocktail pairing, and it starts strong with a sake beer or cocktail alongside a snack that sets the tone for what’s to come.

It’s one of Six by Nico’s more flavour-driven menus, balancing spice, sweetness and umami throughout, and it feels like it’s going to be a popular one while it’s in Cardiff.

Six by Nico’s concept is always playful and a bit different, and this menu really leans into that. It’s great to see the team genuinely excited to share the dishes from their travels and talk through the stories behind each one, which adds something extra to the whole experience.
