Located on the River Usk in the historic town of Caerleon – and once a 12th-century Cistercian monastery – The Priory in Caerleon is undoubtedly one of South Wales’ most unique hospitality venues; over the centuries, it has been a nunnery, a private residence, and since 1996, a cherished family-run hotel and restaurant.
Operated by Benito Martinez and his fiancé Sophie as part of the Fire & Wine group, the bar and restaurant underwent an extensive refurbishment in late 2024. The transformation, completed in early 2025, has seen the Grade II-listed building sensitively updated – blending centuries-old heritage with bold, modern design and a renewed focus on fire cooking, fine wine and provenance.
Now entering its first full summer since the refurb was revealed, The Priory is launching its new summer à la carte menu on 27th June, introducing new seasonal dishes that reflect the kitchen’s contemporary, produce-led approach, whilst maintaining the same focus on cooking over fire.

In addition, an exciting summer series of food & wine focussed events will be held under a beautiful canvas stretch tent set within the venue’s lush grounds:

A collaboration with hosts Adam and Jack from Spanish Wines, this one-off event offers a five-course feast cooked entirely over open flame.
