Matsudai Ramen Teams Up with Masterchef Tim Anderson

Grangetown ramen joint Matsudai Ramen is teaming up with renowned MasterChef Champion, cookbook author and Japanese food authority Tim Anderson for two exclusive supper club dates next week.

Following on from their second charity Ramen Kit collab last year, the Matsudai & Tim Anderson team-up will continue with two supperclub dates at Matsudai’s Cardiff restaurant on the 16th and 17th January. There will be a ‘fire theme’ to the supperclub menu – incorporating small plates and ramen bowls infused with chilli heat, and dishes cooked using a Konro Japanese grill – with many inspired by Tim’s most recent recipe book, Ramen Forever: Recipes for Ramen Success.

Small plates on the supperclub menu include Grilled Mackerel Ichiyaboshi (overnight brined mackerel, finished over charcoal) and Charcoal Grilled Lamb Chops with Fermented Negi Shio Sauce. Ramen bowls will include a Muroran Curry Ramen with pork collar chasu, and a Mayu Tonkotsu Ramen with burnt garlic.

This will be the third time that Matsudai founder James Chant has collaborated with Tim; in 2022, they joined forces to create a limited edition ‘curry goat ramen’ kit; the kit sold out in less than 48 hours and profits from the sale of the kits raised more than £3,800 for two mental health charities. In 2023 they teamed up again, and raised a further £2,212, which has been split between Praxis UK and Oasis Cardiff, two organisations offering support to migrants and refugees.

Of this most recent collaboration with Matsudai, Tim said, “I’ve been obsessed with ramen for 20 years, and I’ve been making it for roughly half of those years. My new book, Ramen Forever, is an attempt to document what I’ve learned along the way. Learning about ramen is a journey that never, ever ends and I’m happy to continue that journey alongside Matsudai, who has made all of us in the UK up our ramen game!”
