Wales’ first Nashville hot chicken restaurant set to open in Cardiff

A husband-and-wife team at Fowl and Fury are bringing Nashville hot chicken to Wales.

 

If you like it hot, the Cardiff food scene is certainly delivering! Jamie and Natalia Rees are the masterminds behind Fowl and Fury. They have been ploughing their trade at Sticky Fingers – a street food venue in Roath – but are now opening their own dedicated Nashville hot chicken restaurant in Cathays.

The concept was born out of a shared love for cooking and eating Nashville hot chicken after discovering a recipe in an American food cookbook. Jamie and Natalia have also done their fair share of market research, sampling the Nashville hot chicken on offer in Canada and Los Angeles.

The inspiration for Fowl and Fury hit whilst eating at Howlin’ Rays in LA. Jamie and Natalia were convinced the UK would take to Nashville hot chicken in the same way they had: They were right.

 

After working on a menu during lockdown and gathering feedback from Instagram, an opportunity arose. Sticky Fingers offered the couple a 4-month stint as resident traders, with their Nashville hot chicken business starting to trade back in the summer of 2021.

Jamie and Natalia then took an important sabbatical. After getting married, they travelled across the southern states of America on their honeymoon and self-confessed “research mission” to develop their knowledge further. During this they got to eat spicy fried chicken in: Texas, Louisiana and of course Nashville, Tennessee (home to Princes Hot Chicken, where the concept was invented).

 

What to expect.

So, what can hot chicken enthusiasts expect to find on Fowl and Fury’s menu? Wings, fries and a selection of veggie and vegan options are on offer. However, their chicken tenders are a headliner.

In terms of the ‘hot’ element, customers have a choice of heat levels: country, x-mild, mild, med, hot or FURY. Fowl and Fury do not recommend first-timers go above mild. They advise: “Please take these spice levels seriously. If you think you can go hotter, come back and try again.”

Jamie and Natalia have been working tirelessly since February to renovate their new permanent home and they plan to open their doors in July: “We are very proud and excited to announce that we will be opening a permanent Fowl & Fury spot in Cathays. We can’t wait to welcome you into our very own hot chicken spot.”

For those who are too eager to wait, you can try Fowl and Fury’s food at Sticky Fingers until May 29th where they trade Wednesday through to Sunday, 5pm-10pm. Sticky Fingers can be found at 199-201 Richmond Road, Cardiff.
