The restaurant in Pontcanna has claimed the capital’s first star
Cardiff’s culinary scene has reached a new milestone as Gorse, located in the Pontcanna suburb, has been awarded its first Michelin star. The accolade was announced on Monday night, marking a significant achievement for the restaurant, which opened its doors last year.
Gorse is the brainchild of chef Tom Waters, a South Wales native who has crafted a menu that celebrates the rich bounty of Welsh produce. The restaurant offers modern British cuisine, with dishes that highlight local ingredients sourced from fishermen, growers, and farmers.

The Michelin Guide praised Gorse for its high-quality cooking, noting the intimate atmosphere and the chefs’ great understanding of flavor and balance. The inspectors highlighted the use of the Welsh larder, featuring elements like seaweed, seafood, and Gower salt marsh lamb. The genial and unobtrusive service was also commended, perfectly complementing the impressive operation.
This recognition places Gorse among the esteemed establishments in the UK honoured by the Michelin Guide and remarkably the first in Cardiff.
