Coffi Co reveals plans to open a new gin and bakery bar in Mermaid Quay
As far as rough rides go, the first half of 2020 has been one of the bumpiest, but one business is determined not to be stopped in their tracks. The people behind the ever-expanding Coffi Co, have unveiled plans to open a new three-in-one gin, bakery and cocktail bar next to their coffee shop in Cardiff Bay.
The idea is simple; watch chefs prepare cakes and other delicious baked goods, while you sit with your socially distanced friends in the sun sipping gin. Or you can grab cakes fresh out of the oven to go. Sounds good right? Everything will, of course, stick closely to social distance guidelines, with the chefs baking behind screens so you can still watch your pastries come to life.
The outside area will be transformed into a garden and will be perfect even for larger groups such as parties and hen do’s. Or it could be just you and some mates if you want to celebrate the lifting of lockdown with some traditional afternoon G & Tea.
In the evenings there will be sharing platters available for groups. As well as Gin, there will be a wide selection of premium alcoholic drinks like prosecco, wines and ciders that will be served from the inside bar or in the Gin Garden. Let’s hope the weather continues to be as glorious as it has been these past few weeks.
Taking over the site of Carluccio’s, the fusion of baking and booze will be in prime position, overlooking the oval basin. The plan is to open on the 3rd of July for takeaway afternoon tea and alcohol.
Just before the March lockdown started , Coffi Co had just taken over the old Figtree on Penarth’s esplanade and has launched serving takeaway coffee, cakes and hotdogs on electric bikes around Penarth.
I know I’m not the only one desperate for lockdown to end, so we can all go back to enjoying the summer at our favourite places down Mermaid Quay. Gin & Bake sounds like the perfect addition to end the lockdown blues.
