Pettigrew Bakeries New Glazed Pistachio Croissant

Cardiff’s award-winning Pettigrew Bakeries is adding a brand new pastry to its line-up: a sugar-glazed Pistachio Croissant filled with pistachio crème diplomat, finished with a handmade pistachio-shortbread crumb.

Built on Pettigrew’s signature lamination and patisserie craft, the pastry starts with a buttery, sugar-glazed croissant, which is sliced and filled with a pistachio crème diplomat, before being covered in a pistachio and shortbread crumb for extra bite, texture and richness.

Launching Friday 9th January, the new Pistachio Croissant will be available 7 days a week at all Pettigrew Bakeries locations (and Cardiff Farmers Markets) – giving customers a delicious new reason to plan a weekend bakery run.

As well as being known for their signature lamination and patisserie, Pettigrew Bakeries is one of Cardiff’s pioneers of craft sourdough, known for sourdoughs made with organic flour over a 72-hour process, alongside a rotating calendar of limited-edition pastries that regularly become social media favourites.

The business now operates across four outposts in Cardiff; the original Canton site opposite Victoria Park, the Moy Road garage site in Roath; and two retail-only bakery shops and café spaces – one in Rhiwbina Village, and one in the city centre, in Castle Arcade. Pettigrew Bakeries also trade weekly at Cardiff Farmers Markets in Rhiwbina (Fridays), Roath (Saturdays) and Riverside (Sundays).

David Le Masurier, founder of Pettigrew Bakeries, said: “Our Crème Brulée croissant has become somewhat of a social media sensation – we love tourists hunting us down from videos they’ve seen on TikTok or Instagram just to try it. We like to keep things interesting and we work on new recipes year-round; we thought this would be the perfect time to launch something a little bit indulgent to chase the January blues away.”

At the end of 2024, Pettigrew Bakeries attended the UK Baking Industry Awards, where the family-run business was named ‘Craft Bakery of the Year’. Amy North, Editor of British Baker and head judge, said at the time, “Pettigrew Bakeries is a deserving winner of Craft Bakery Business of the Year… an exemplary business which serves as a reminder of the thriving craft bakery scene in the UK.”
